Millionnaires Anchovy Toasts
1 x 1.75 oz. (50 g) tin MILLIONNAIRES flat fillets of anchovies
Oil for frying
16-20 ½ x ½ x 3 inch (1 x 1 x 6 cm) fingers of day-old bread
2 tbsp. (25 ml) olive oil
1 tbsp. (15 ml) each of fresh lemon juice, minced parsley and minced onion
1 clove garlic, minced
Fresh ground pepper
Heat oil in skillet and quickly fry bread fingers. Drain on paper towels. Combine olive oil, lemon juice, parsley, onion, garlic and pepper well. Sprinkle over each finger. Drain fillets on paper towel and cut each in half. Place anchovy on top of each finger and serve.
Makes 16-20 pieces.
